Closer to jicama than water chestnut. But yeah, bland crunchy. And firmer in texture than those aforementioned bland crunchy things. I think it's hard to get a downright awful som tum because it's usually considered "real" Thai food and not an invitation to make things Americanized in flavor (soupy, sweet and bland).
