Sausage Casings?

Does anyone know where I can find sausage casings?
I'd prefer synthetic, but any would be useful at this point..

I'm going to need a fair amount.

They were natural, and tough to handle. I used Ruhlman's Chacouterie book as a guide, and the sausage came out decent, but not great. I need more practice in keeping it cold AFTER the grind.

Alton Brown says you can order them online easily - http://www.onestopjerkyshop.com/product_info.php?products_id=144 was the first item to come up on a search.

Until I'm ready to practice sausage making again, I've been making various bacons and I'm making duck confit right now.

If I were you, I'd get yours at savenor's, they have fresh casings, as opposed to the ones packed in salt that you usually find at regular grocery stores. I've found that they're easier to use fresh. Savenor's also carries pork back fat, which you'll probably need for your sausages and I've had a hard time finding at grocery stores.

Charles / MGH stop. Go out the doors, take a left, and it's across the street on the right-hand side. The also sell duck fat by the quart .

One warning - they are horrifically expensive.
