I wonder if all the good stuff would be gone if I got there a little after 5:00. Guess I'll just have to try sometime.

Nope, they usually have stuff right up until the end. Occasionally something will be super-awesome and sell out around three, like organic peaches, local cider, or the year's first sugar-snap peas. But generally the quality is consistent around "just awesome" and available until at least five-thirty. My experience is that after that folks are starting to pack up a bit.
