Sorry for the random lame question but I was wondering whether anyone knows off the top of your head whether the Porter Square Shaw's carries vital wheat gluten? The only place I've been able to find it is Whole Foods and I'd rather not drive all the way out there. But I need some today. Any ideas? TIA!

Haven't seen it there, but it's cheap in bulk at Harvest Co-op right by the Central Square T stop; that's where I always go.

You could also call Cambridge Naturals, they're only a couple of doors down from Shaw's at Porter Square.

I don't remember Shaw's carrying a lot of speciality flour-related items. I want to say that Market Basket might. hmmm.

At the Harvest Co-Op in central they actual have several different types of wheat gluten in bulk. Cheap.

Yes, they have it, or did a few weeks ago. I believe it's Hodgson Mill Vital Wheat Gluten with Vitamin C.

I used the stuff to make seitan many years ago, but I have forgotten how and have not found a recipe that suits me, but it catches my eye at the supermarket sometimes because of that, and I think I *might* have seen it at Stop & Shop...

Diverging from the topic at hand, but I'm very fond of this seitan recipe (http://www.postpunkkitchen.com/forum/viewtopic.php?id=15959); the boiling ones are such a pain. This one I can just get a bunch of gluten, make a bunch of seitan, roll it into foil, bake it, and have seitan for the next few weeks. It's awesome!

It depends how thin you slice them and how much seitan you consider a serving, but I'd make one log for a curry for 4-8, two for a curry for 9-12, and three for a curry for more than that. I'd say 4-6 servings, not slices, I guess. :) If you cut thin slices you could probably get like 20, though if it's squishy getting slices that aren't thick can be tough. Even thickish slices you'll get like 10.
