I know sirraco (sp?) via tags does both knives and yard tools. At the union square farmer's market they do knives while you wait but it's only once a month.

Siraco's actually does the Tags sharpening, in addition to their own direct work in Union Square and elsewhere. They do a great job and have been at it for years. Give them a try!
Stoddard's and On the Edge if you can line up with a place they'll be at the right time are my top picks for nice kitchen knives that are as much as possible hand-sharpened and not machine-ground.
I needed to get mine sharpened and kept missing the Union Square window, so (having learned about it from this post) yesterday I took my primary knife to Local Root. The guy who does the sharpening happened to be there, so (after asking if I minded waiting) he did it right then while I drooled over the merchandise.
They did a great job. I feel like it's better than the last couple of times with Siraco, and I do actually appreciate having the plastic guard now (they included it with the sharpening). The folks there were also very nice.
