Um, simply marketing? It gets people into the store. Once people (students; other new folks in the neighborhood) go in for their freebie, and see what else the store has, they might buy something right then and there, or stop in at later times when they need something.

And it gets White Hen Pantry talked about in social media. Which also means that even folks who don't go in for the free lunch, might remember "hey, there's a White Hen in Ball Square" the next time they need to stop by a local convenience store.
