I do not want to repost the whole thing, but the jist is I am looking to find out about renting a commercial kitchen. If I had my druthers, it would be in Davis/Porter/Teele/Union/Ball.

I cannot help with finding a kitchen, but a couple of friends have opened a jam making business in Wisconsin and rented a kitchen for the purpose. I'll ask if they have any insights or suggestions.

Clover (of the food trucks) just opened a restaurant/kitchen space in Inman, and I think they said they were interested in sharing their commercial kitchen space with other community enterprises... might be worth contacting them anyway! (They are really nice people and into unique businesses/good community relations so they might be able to advise you even if their kitchen isn't suitable.)

a restaurant closed on sunday or monday? a catering kitchen?

Or a church. Or a school. Or a camp or club. This is how the local SCA does it when they want to cook a feast and need to rent an industrial kitchen.
