Knife Sharpener recommendations/suggestions?

Hi all-

I did a (admittedly half-hearted) search around the site and didn't see this anywhere, so I thought I'd give it a shot. I missed every weekend that the knife sharpener was at the Union Square Farmers Market this summer (I always happened to be there on the off-weekend!). Does anyone know of a good year-round sharpener? Holiday cooking reminded me of how dull my knives are getting...

This might sounds stupid, but how does one drop off knives for sharpening? I can't imagine they'd be thrilled if I handed them a plastic bag of my knives (in need of sharpening but very much able to slide a good chunk of skin off).

You can rip a paper bag and wrap it around the blade a few times and tape it together. I think that's how I got them back the last time I picked them up from the Union Square farmers market.
