Listen up kids-

I'm having my housewarming tomorrow- I know you all make delicious food in the privacy of your own home, and tossed a party or two- can any of you hook me with delicious appetizer style recipes? It's catering by moi- and I'm kitchen impaired on occasion- so any help would be greatly appreciated!

Spinach Artichoke Dip!

> 1/2 cup Romano (or Parmesan) cheese, grated
> 1 clove garlic
> 1 10 oz. pkg. frozen chopped spinach, thawed and
> squeezed dry
> 1 10 oz. pkg. artichoke hearts, thawed, chopped
> 1 8 oz. container cream cheese, plain or garlic chive flavored
> 2 large eggs
> 1 cup mozzarella cheese, shredded

Spicy pineapple

This is a yummy spicy toothpick-food:

1 pineapple
1/4 cup rum
Tabasco
Cayenne pepper

Get a fresh pinapple (already cored and skinned) from any grocery store. Chop into bite size pieces. Mix together rum, tabasco and cayenne to reach your desired spicyness. Pour mixture over pineapple and serve with toothpicks.

Easy and yummy!

Cut 4 portobello tops into 1/2 inch slices, marinate them for a few hours in 1/4-1/3 cup olive oil, 4-6 garlic cloves (minced), and some chopped fresh basil. Sprinkle some balsamic vinegar if you like. Fire these up either on the grill directly or wrapped in aluminum foil. Serve alondside the fresh mozarella/tomato slices that have become so popular.

Stuffed mushrooms-

Get large mushrooms, wash, break off stems.

Chop up stems and a small onion.

Cook stems and onion in small frypan with lots of butter.

Take out of pan, mix in with some Italian bread crumbs.

Stuff mushroom caps with mixture, put caps on a greased pan, bake in 400 degree over for about 12 minutes.

Serve.

Tortilla Roll-Ups

mix 1 block softened cream cheese with diced up red/green pepper & canned chopped black olives (make sure to drain the olives first). spread a thin layer over a tortilla, then roll it up. you can then slice it so you have little tortilla pinwheels.
for extra color use spinach or tomato tortillas.

these things are incredibly easy, quick, and cheap but people seem to love them.

Not so healthy but super simple:
1 package of Instant Leek Soup (powder stuff)
1 pint of sour cream
mix, serve with chips/pretzels/other crunchy stuff
