You can buy knife sharpeners in a lot of places that are quite easy to use, actually. I have one like this (http://www.accusharp.com/), and I think I got it either in the kitchen supplies section of the supermarket or at Tags.
Those will destroy good knives. Good knives should be regularly honed (which you can do yourself with a honing steel) and should be sharpened professionally once every few years.
Honing realigns the blade without taking off any material and makes a huge difference and is easy. Sharpening takes off material from the blade and is tricky to do right and doesn't need to be done all that often.
Siraco Sharpening Service does nice work, if you're looking to get it done professionally.
They don't have an active storefront anymore, though (they used to be in Magoun Square, IIRC) - they have various pick-up/drop-off points anymore, and they're at the Union Square Farmers Market on the second and last Saturdays of the month (so, this coming weekend, assuming they're still going there).
Those tiny pumpkin-carving saws are totally worth the $1.99 or whatever they cost. I know it seems silly. You've gotten along without special pumkin carving tools your whole life.... but we got some on a lark last year and I will never, ever go back to the carving knife.
You can leave a knife at Tag's (downstairs at the back counter) and they'll send it off to Siraco for you. It's dirt cheap - like $4 a blade or something like that and they do a great job.
